Baked Jalapeno Poppers

Makes 16


  • 8 jalapenos, halved and seeded
  • 4 oz cream cheese
  • 2 oz monterrey jack, grated
  • 2 oz cheddar, grated
  • 1 Tbsp green onions, chopped
  • 1 tsp cajun seasoning
  • 1/4 lb andouille, finely diced and browned (optional)
  • 1/2 c breadcrumbs, fine textured and seasoned


  • Preheat oven to 350°.  Combine cheeses, onion, seasoning, and andouille, if using.  Stuff jalapenos with filling.
  • Roll filling side in breadcrumbs.
  • Place on parchment-lined baking sheet.  Bake for 30 minutes.
