- 8 jalapenos, halved and seeded
- 4 oz cream cheese
- 2 oz monterrey jack, grated
- 2 oz cheddar, grated
- 1 Tbsp green onions, chopped
- 1 tsp cajun seasoning
- 1/4 lb andouille, finely diced and browned (optional)
- 1/2 c breadcrumbs, fine textured and seasoned
- Preheat oven to 350°. Combine cheeses, onion, seasoning, and andouille, if using. Stuff jalapenos with filling.
- Roll filling side in breadcrumbs.
- Place on parchment-lined baking sheet. Bake for 30 minutes.
